The company BRATA Produktion GmbH is one of the leading European manufacturers of breadcrumbs and food coatings for the food industry. We are a German family owned company, founded in 1953. Besides the production of breadcrumbs we are also manufacturer of batter mixes, tempura batters, flour breaders and blended breadcrumbs. Our products are used in various areas of the food industry as breaders, fillings, binding agents and carrier substances. Our products are exported to more than 60 countries worldwide. Whether chicken, turkey or pork, whether fish, cheese or vegetarian products – the breading always adds the right zing. Red, yellow, white or mixed with different ingredients, herbs or spices – you will always find the right breadcrumbs here.
Breadcrumbs
All breadcrumbs produced are made from freshly baked bread in our own factories on three state-of-the-art lines. They consist exclusively of natural ingredients. Wheat flour, water, salt and yeast, as well as paprika and turmeric for coloured products. BRATA offers quality for all kinds of applications. This includes breadcrumbs across the board for different areas of application. Ultra crunch products are fluffy and crunchy. Master crumb products are crunchy to the bite and just melt in your mouth. More than just taste: BRATA breadcrumbs shine in yellow, orange and red or are simply bright. The spices used in the baking process create colour nuances that are pleasing to the eye. Sand, grain, pebble – the range of granulation in BRATA breadcrumbs is wide. From “very fine” like flour to coarse-grained granulates, there are products in the range. BRATA breadcrumbs are used in a variety of ways. As a loosener in minced meat products such as meatballs, as a crispy coating for schnitzel, fish fingers and vegetarian products, in the production of breadcrumbs or napkin dumplings or as a carrier for spice mixtures. The breadcrumbs are also suitable as an accompaniment for fresh and aromatic products.
Tempura batters
Finger food with an appetite guarantee: chicken nuggets have become an indispensable snack. With BRATA tempura batters, the globally popular poultry snack becomes a classic: golden, bite-sized and crispy. Tender-crispy fish enjoyment for young and old: BRATA coatings, the golden sticks become an all-round delight. Fish ‘n’ chips are on everyone’s lips and have become a hit as convenience food worldwide. Deep-fried calamari rings coated in tempura batter are an internationally popular snack. The calamari are mild in flavour and bring a fresh sea breeze to the plate. With the rings, fried in oil, a slice of lemon and a glass of white wine – more enjoyment is hard to find. Apple rings in tempura batter are popular from traditional cuisine. Bakers with a love of detail pre-treat the product with a fine BRATA breadcrumb and then pull it through the tempura batter. Deep-fried briefly – and the treat is ready!

BRATA knows the secret of the perfect batter mixes. The use of flour and starch in water is the modern standard nowadays. The food industry trusts in our innovations. It’s not just the pinch of salt that makes BRATA batter mixes unmistakable in taste. In the smooth flow, the batter mixes nestle flexibly to the respective product.
